Scientists from Brazil and Germany have created a new plant-based meat substitute from sunflower flour. Researchers from the Institute of Food Technology (ITAL) and the University of Campinas (UNICAMP) together with the German Fraunhofer IVV Institute have developed a product that can replace traditional meat, writes agronews.ua.

The process, as scientists explained, starts with extracting oil from sunflower seeds. Then, the husks and phenolic compounds are removed from the residue to make the flour safe and easily digestible. These substances usually give the product a dark color and reduce the absorption of nutrients.
Scientists chose sunflower because it is grown in many countries and is not genetically modified. Sunflower flour can become a valuable source of protein, meeting the global demand for ecological and sustainable food products.
The head of the research, Maria Teresa Bertoldo Pacheco, noted: “After removing the husks and phenolic compounds, the flour has a neutral taste and aroma, unlike most plant proteins.”
She also emphasized that the flour has a balanced set of amino acids and good technological properties. According to her, creating a fibrous structure similar to meat is the key to the realistic texture of the product.
The researcher added that the work contributes to better utilization of sunflower and increases interest in its nutritional value. She also highlighted the cooperation with German colleagues, which has allowed for the exchange of knowledge and experience.
